Wooli is a small town at the end of the road, a tiny strip of land between the river and the sea. Most people’s response when hearing the name either confuse it with Bulli or say "I've passed the turnoff on the highway." It is often overlooked for the more popular and accessible towns of Coffs Harbour, Yamba and Byron Bay - but they like it that way.
With only about 500 permanent residents everyone tends to know everyone else. Although the population doubles during the summer months, there is plenty of room for everyone with about 7km of beach. Most of the time though it is just a sleepy little town where people stop to say hello, barter with each other for fresh fish, prawns, lobsters, crabs, oysters, fruits and vegetables in season. The kangaroos graze on the football field in the middle of town only disturbed by someone practicing their golf swing.
Wooli Wooli in aboriginal means many waters. Besides the ocean and river there are two fresh water lakes, Hiawatha and Minnie Haha, that supply the local towns with their water.
The oysterfarm is in Wooli and offers oysters at their peak.
At the beginning of the season (Nov to Feb) they are placing approximately 10 dozen Sydney Rock Oysters onto an individually numbered tray for you. At this stage the oysters are about 3 years old and they could be eaten but they recommend that you leave them until the next season (Nov to Feb of the next year) and if the season goes well some of your oysters could be huge. No matter what, they will notify you when your oysters are in their absolute prime condition and deliver them to your door.

On your doorstep you will receive approximately 10 dozen unopened oysters. They will come in a specially designed container to hold their best possible temperature and condition. Inside will be an oyster knife, gloves and all the instructions you will need to enjoy some of the best oysters in the world at their best.
Why unopened? For the best possible flavour, quality and freshness, of course! An oyster should be eaten within an hour of opening or shucking, the French would not consider them any other way! They will also last longer, an unopened Sydney Rock Oyster can last up to two weeks out of the water, under the appropriate conditions.
For the ultimate experience, why not come and visit your oysters and maybe even eat a few off the side of the boat. They would love you to come and visit the area but please call and make an appointment first as they don't want to disappoint you because of tides, weather or pressing work demands.

There will also be comments and updates from the oyster farmers on how your oysters are doing and what is being done to them.

Introductory Pack Contains
Their aim is to notify you about 7 days before you are due to get your delivery of scrumptious oysters. But even after you are notified of the delivery day they may have to change that date. This is because if it rains and the oysters spawn unexpectedly they will hold onto them until they are at their peak again. They will certainly let you know if this happens. What it means for you is that you will only receive your oysters in their best possible condition.
